onion jam
2 cups of water
2 cups of sugar
4 red onions, peeled and sliced
7 gr. pectin (or about half a sachet)
small glass of red port wine (or any type of sweet wine)
teaspoon cinnamon

Put water and sugar in a small pan and set to boil, stir until sugar has completely dissolved. Add onion rings, simmer for 20 minutes or until onions are soft and have soaked up the sugar syrup. When the syrup has the density you desire, add the cinnamon. Mix the pectin and port wine and add this to the sugar syrup. Allow to simmer until alcohol has evaporated.
Pour the mixture through the sieve. Remember to place a bowl underneath :). Grate well. Mix the syrup and the onion squash well, and leave to cool in glass jar.


Serve on the side with chocolate cake, cheese dishes, red meat or sausages on the BBQ!
